Easy and delicious spring vegetable frittata is super easy to make and are loaded with protein and healthy fats. This makes a great breakfast, lunch or dinner that everyone will love!

Spring Vegetable Frittata

Ingredients

  • 2 tablespoons onion, diced
  • 2 teaspoons avocado oil
  • ½ cup, Spring peas
  • ½ cup cherry tomatoes, halved
  • 3 full eggs (or 5 egg whites)
  • 1 tablespoon feta or goat cheese
  • Sprinkle sea salt and freshly ground black pepper
  • Optional: 5-6 parsley or coriander leaves.

Directions

  1. Preheat oven to 380o F.
  2. Over medium heat, sauté the onions in the oil until translucent.
  3. Add peas and tomatoes, and continue to sauté for a few minutes. After the vegetables begin to soften, transfer the vegetables to a non-stick oven-safe pan.
  4. In a small bowl, beat the eggs and add the cheese, salt, and pepper. Pour the mixture into the pan to combine with the vegetables.                                                                                                                         
                                                                                                        
  5. Bake for 15-20 minutes until cooked, and arrange.
  6. Sprinkle with parsley or coriander leaves before serving. Serves 1.
